Adam Handling appoints new bar manager

Adam Handling has announced the appointment of Marco Grisafi as bar manager of Eve Bar.

Restaurateur and pub operator Adam Handling has announced the appointment of Marco Grisafi as bar manager of Eve Bar in London's Covent Garden.

Grisafi, who was previously head bartender, will now oversee the development of Eve Bar’s drinks menu.

The new menu features innovative cocktails inspired by the restaurant kitchen upstairs at Frog by Adam Handling, utilising ingredients that would otherwise go to waste.

"I’m honoured to take on this new role and I can't wait to get started on achieving the ambitious goals we have for Eve Bar," says Grisafi. "Thank you to all the people who work alongside me, I am very proud to be part of this incredible team."

Coming from a small town from the north of Venice, Italy, Grisafi started working in hospitality as a teenager. At 25, Grisafi moved into bartending full time, working at a variety of bars across Italy. In his early 30s, he moved to Lignano Sabbiadoro in north east Italy, where he met his mentor who taught him the foundations of his cocktail knowledge. In 2019, he moved to London to pursue his dream of working in one of the world’s leading cities in bartending. At the end of 2019, he started working for Adam Handling’s Eve Bar, where he’s been able to develop and excel in his passion.

In May 2021, Handling opened his first ever pub, The Loch & The Tyne in Old Windsor, naming two of his senior chefs, Steven Kerr and Jonny McNeil, as co-vhef proprietors. His aim is for The Loch & The Tyne to become the most sustainable pub in the UK.
