Dream team reopens The Salusbury in London
Gareth Cooper, Alex Payne and Jon Drape have reopened The Salusbury in Queen’s Park.
The Salusbury in Queen’s Park’s has reopened under the stewardship of three on-trade pros.
Friends and locals to the area of London Gareth Cooper, Alex Payne and Jon Drape are behind the new pub project.
Cooper is the founder of Broadwick Live and the driving force behind Printworks and Freight Island, while Payne is the owner of The Rectory and The Potting Shed in Crudwell.
The new vision for The Salusbury stays true to the venue’s history as a business of two halves: a drinkers’ bar on the left, a dining room on the right, and a new private dining room seating 10-12 people.
Food for thought
Executive chef is Tarryn Bingle began her career started in Australia and spans some of London’s most respected kitchens, including time under Anthony Demetre at Arbutus, followed by nine years at Michelin-starred La Trompette. She later became head chef at The Rectory, working with Payne. Following her tenure in the Cotswolds, she returned to London as senior sous at The Pem, the female-led restaurant formerly led by Sally Abé.
Excerpts from Bingle’s menu include a Dorset crab cacio e pepe, Suffolk lamb with smoked potatoes and a Chateaubriand with chips for two to share.
Puddings include fresh doughnuts with peaches and cream,and a wobbly custard tart.
In the pub, a blackboard of daily changing snacks will feature oysters with homemade hot sauce, parmesan churros, pickled sardines with cod’s roe and tomatoes, and a scotch egg. There is also an ‘On toast’ section, including a fresh parfait, tomato and soft ricotta, and a welsh rarebit.
