Ex-Dabbous and Bull & Last duo to open Islington pub

Rob Tecwyn and Adam Symonds are reuniting to open a new neighbourhood pub in north London.

Rob Tecwyn and Adam Symonds are reuniting to open a new neighbourhood pub in north London, 10 years after they first met at the renowned Bull & Last in Highgate.

The duo, who boast impressive hospitality CVs, will launch The Baring in Islington in May. 

Tecwyn (pictured above right) has worked as head chef at Ollie Dabbous' eponymous restaurant Dabbous, as well as The Henrietta Hotel, Moro, Morito and, most recently, as senior sous chef at Kerridge’s Bar & Grill.

Symonds (left), meanwhile, spent five years at the helm at the Bull & Last as general manager, before moving on to Notting Hill restaurants Orasay and Six Portland Road.

Having talked about opening a pub together for many years, the duo will now bring their experience and passion together at The Baring.

“I believe in the value of serving great produce with respect to the land it comes from," says Symonds. "Whether vegetables, meat, wine or beer, they have to be chosen with appreciation for the integrity of the process, placing particular importance on sustainability and non-invasive farming. Opening a pub with Rob is an extension of our beliefs, as well as a move to adapt to the changing times within our industry; placing staff wellbeing and quality of life at the forefront of a successful business and creating a space that is not only welcoming but also inclusive and inspiring.”

Located just off Regent’s Canal, sustainability, provenance and a low environmental impact will be the guiding principles at the new pub. 

The food menu will be a concise selection of bar snacks, starters, main courses and desserts. The Baring will also serve a Sunday roast, as well as a special for lunch from Tuesday to Friday, offering a weekly changing dish along with a glass of wine for £15.
