Umbrella Project team announces new cocktail bar
The operator of Discount Suit Company and The Sun Tavern will open Parasol in Dalston.
Andy Kerr (above left), operator of London's Discount Suit Company and The Sun Tavern, has announced a new cocktail bar project in Dalston, partnering with local bar operator Tom Gibson (above right).
Parasol is set to open in Dalston in early spring 2025, promising to bring 'cutting edge cocktails in an atmospheric and inviting space' to Stoke Newington Road.
Taking over the previous site of nightclub The Nest, the 150-person venue is the imagination of local duo Kerr, founder of The Umbrella Project, and Gibson, who launched the cult Stoke Newington bar Ruby’s, before opening Corrochio’s with Amy and Daniel Corrochio in May 2024, as well as north London pub The Bluecoats.
"Since first meeting in Stoke Newington 12 years ago and working together on the Ruby’s cocktail concept, we’ve had the dream of working together on our own project, in our own neighbourhood," say the duo. "Now feels like the perfect time for us to launch Parasol, with Dalston’s nightlife and culture seeing a great resurgence, which we’re both tremendously excited about."
Parasol’s debut menu is yet to be revealed, but drinks can be expected in the vein of what The Umbrella Project has previously offered, including takes on classics and a seasonally changing signature house menu, which is currently under development in its development lab at The Umbrella Workshop.
