South East Pub of the Year launches zero waste dinner

The Mutton at Hazeley Heath is already planning its next activation.

An award-winning pub in Hampshire is preparing to launch a 'zero waste' dinner in celebration of Zero Waste Week in September.

Following The Mutton at Hazeley Heath's triumph at the 2024 National Pub & Bar Awards, where it was named South East Pub & Bar of the Year, the venue is already planning its next activation. 

During Zero Waste Week (2 to 6 September), The Mutton will host a special Zero Waste Dinner on Thursday 5 September.

Head chef Rob Boer has curated a five-course meal that champions sustainability to be served exclusively at the event. Emphasising zero waste principles, the menu will showcase the finest local ingredients and innovative cooking techniques aimed at minimising food waste.

Menu highlights include Mutton BBQ Ribs (saved from pork belly), Mackerel Tails (typically discarded), Broccoli Fritters (made from broccoli stalks), and Crackers (made from sourdough trimmings).

There will also be Mini Lemon Sole (normally thrown away due to their small size) and Venison using all parts of the deer. The prime loin is featured alongside a Bolognese croquette made from off-cuts, with a Boulangère potato flavoured from stock using venison bones.

Tickets for the one-off dinner are £40 per person for food with an additional £30 supplement for the wine pairings.
