Palé Hall estate opens The Bryntirion Inn
Luke Selby has reopened The Bryntirion Inn on the Palé Hall estate.
A 300-year-old pub has reopened on the Palé Hall estate in Snowdonia, north Wales.
The Bryntirion Inn has relaunched under the watch of Luke Selby, chef partner of Palé Hall hotel, which he took on in January following his time as exec chef at Le Manoir Quat'Saisons.
The pub, open for locals, hotel guests and non-residents, is now fully operational under Selby and Bryntirion head chef Ethan Cleary, who have created a menu of refined takes on pub classics, rooted in the terroirs of north Wales.
Dishes include Black Pudding Scotch Egg with Brown Sauce, Cod with Jerusalem artichoke, potted shrimps and brown butter, and Forced rhubarb, candied ginger and custard tart.
Produce is also grown within Palé Hall’s on-estate kitchen garden, which Selby plans to expand
and nurture over the coming months.
The inn, which has six of its own bedrooms, is located less than a 10 minute walk from the doors of the main hotel.
