Bart & Taylor to open Cato bar in Covent Garden

A new bar called Cato will open in Covent Garden in January.

A new bar called Cato will open in Covent Garden in January, coming from the operator behind Fern, Trickle and the Adam and Eve.

Hospitality Group Bart & Taylor, led by Aiste Bart and Andrew Taylor, says it is bringing 'New York City soul, British produce and a boundary-pushing cocktail list' to Seven Dials when it opens at the beginning of the year.

The latest bar, inspired by Cato Alexander, is in partnership with bartender Angelos Bafas, and is spread across three spaces.

On the ground floor, The House of Julep will serve as a welcoming entry point, centred around the julep, the cocktail Alexander made famous in the 1800s. 

In the basement, Cato will offer a more intimate setting built around its main cocktail menu, Colour Has Flavour. Fourteen cocktails span seven hues, each named after its two defining ingredients and crafted using British spirits and produce.

Completing the venue, Cato’s Study will act as a 'creative laboratory', with a communal table hosting masterclasses, pop-ups and experimental serves led by the team.

Food at the bar will involve American classics, including fried oysters, burgers and toasties.
