Goodbye Horses team to launch new wine bar

Alex Young and George de Vos are preparing to open Stable Wines.

The founders of wine bar Goodbye Horses and ice cream/wine shop The Dreamery are set to open a third site, which will open in London's Islington in December. 

Alex Young and George de Vos are preparing Stable Wines, a new wine shop that features a bar and dining space below.

Housed in a glass-surrounded space, just off Essex Road, the shop features a custom-made counter made from the same oak tree as the bar at Goodbye Horses, with carved volcanic stone from Mount Etna running throughout. 

A staircase behind the counter takes guests down to the subterranean bar and dining space. Historically a bank vault, much of the space has been preserved, with hidden corners and arches. The main vault, with its original iron railings, remains, having been transformed into Stable Wines’ own vault room stacked with rare, unique and unusual bottles.

"We’re drawn to the unexpected, things that surprise," says Young. "This lost greenhouse off Essex Road, hiding a staircase to a labyrinthian cellar, is exactly that."

Through another entryway lies four candle-lit arches, each with its own banquette seating for 10.

"Wine and food, of course, will be a central part of Stable Wines, but so is the sound, light and feel of the space," adds de Vos. "It’s a place to taste, linger, and slip out of the world for a moment."
