Brains has launched ‘SHACK’, a new facility to develop chef talent and create career pathways within the business, as well as the food industry in Wales.
The Skills Hub and Creative Kitchen (SHACK) will be used alongside developed coaching programmes that addresses the shortages of chefs in the hospitality industry.
SHACK will develop the skills and knowledge of existing Brains chefs, as well as offer new chefs a chance to get a start in the world of food. The SHACK will include training on food specific creations, equipment trials, menu launch training and essential kitchen techniques.
“Our Kitchen Skills & Safety Team have created programmes that can take somebody from a pot washer all the way through to a kitchen manager within our teams,” says Alan Todd, head of food at Brains Brewery. “We are truly showing as a business what we are prepared to both invest in the future of our chefs and the food service we provide to our customers.”
SHACK will also play a key role in menu development to make sure the food offering at Brains pubs continually evolves. This programme involves a 24-week process of category management, market research, recipe building and capacity management all rolled into an ongoing annual change plan.
