David Layton’s south London bar brand Brick & Liquor has appointed Victor Zuriaga as executive chef as the company announces ambitious growth plans.
Zuriaga has over two decades of experience, with a history of increased food sales and improved profitability, most recently achieving a 26% like-for-like uplift in food sales at bar group Novus Leisure.
“When I first met David 10 years ago we quickly developed a friendship based on mutual respect and admiration,” comments Zuriaga.
“He is ferociously driven and has a genuine devotion to customer experience which is quite rare.
“In 2016, he asked me to create the food proposition for Brick & Liquor and just over a year later, with another venue opened and more forthcoming, I’m delighted to join David full time to help the business expand.”
Brick & Liquor has also announced ‘buoyant’ trading, with double-digit like-for-like sales growth over the festive trading period, followed by a ‘particularly resilient’ January.
The team is in the process of acquiring further sites to add to its existing venues in Tooting and Clapham.
